It's no secret that Peachy Palate loves her oats, especially mocha overnight oats! She's created this healthy overnight oats recipe just for us, and it's bound to get you out of bed and put a zing in your step! These collagen protein oats are a great way to enjoy your daily serve of Edible Health, and this is certainly one of our favourite low-maintenance collagen recipes. Enjoy!
Preparation Time - 10 minutes + Overnight
Servings - 2
Ingredients
- 1 cup of jumbo oats
- 4 tbsp Edible Health Bovine or Marine Collagen
- 125ml cool or cold espresso / cold brew coffee
- 250ml milk of choice, I used dairy-free oat
- 1 - 2 tsp honey or maple syrup
- 2 tbsp hazelnut or almond butter
- 2 tbsp whole chia seeds
- 1 tbsp raw cacao powder
Directions
- Mix together all ingredients in a large bowl or jug.
- Place into the fridge overnight and in the morning you can serve as is, thin out with a little milk or yogurt, and top with banana, cacao nibs, chopped hazelnuts and coconut flakes before digging in.
