A yummy non-dairy delight that’s good for brekkie or dessert with no nasty sugars. Just 5 minutes to make, a few hours to set and you’re done! ⏱ Pudding when you get home from work and brekkie for the morning 🥥
Makes 6 ramekins
- 1 400ml tin coconut milk
- 5 heaped tablespoons chia seeds
- 3 teaspoons honey
- 1 teaspoon vanilla
- Pinch salt
- Edible Health collagen
- Fruit of your choice
Open coconut milk and pour into a glass bowl. Add water to the empty tin until about ¼ full and swoosh it around and add to the bowl. This gets it all out but also thins the milk a little.
Stir in your chia seeds, honey, vanilla, salt and collagen, so it’s all nicely mixed and the honey and collagen are dissolved.
Leave for a few minutes and then stir again. It should start thickening up. Put the berries or fruit into the ramekin dishes and then top with the chia mix. Put into the fridge. Set. Eat. And most likely go back for seconds!
NOTE: I use berries to keep this low GI but anti-oxidant high. I keep a stash frozen and just grab them when I need and I defrost under a warm water tap for fast thaw!
DOUBLE NOTE: If your mix doesn’t start setting after 10 or so minutes, stir in more chia seeds, one tablespoon at a time.
