- 50g almonds
- 25g pistachios
- 25g cashew nuts
- 25g sunflower seeds
- 25g unsweetened desiccated coconut
- 140g dried fruit - mixture of any of the following works well - unsulphured apricots, (chopped), goji berries, cranberries, raisins, sultanas
- 20g pumpkin seeds
- 8 tbsp Edible Health collagen protein powder
- 4 tbsp almond butter
- 5 tbsp coconut oil
- 60ml date syrup/brown rice syrup/honey/maple syrup
- Half tsp vanilla extract
- Large pinch of sea salt
Line a tray (approx 20cm) with non-stick baking parchment.
Put the desiccated coconut, pumpkin seed, dried fruit and collagen powder into a bowl.
Blitz almonds, pistachios, cashews and sunflower seeds in a food processor until finely chopped, then add to the dried fruit mix.
Melt the coconut oil over a gentle heat. Once melted remove from heat and add the almond butter and honey or syrup. Whisk until combined.
Add the wet ingredients to the dry ingredients and stir well. Put the mixture into the lined tin and press down well - a potato masher works well.
Put in the fridge to set for a few hours then slice into bars. (Makes 9 bars, although it also works well cutting them into mini bite-size pieces).
Store in an airtight container in the fridge for up to a week (they probably won’t last that long). Also suitable for freezing.
