Blending luscious coconut milk with a tangy punch of pineapple and lime makes this an extra-tasty way to see in the New Year without seeing in a hangover at the same time!

Pina Colada & Collagen Mocktail Ingredients
- 4 tbsp Edible Health Collagen Digestive Enzyme Collagen Blend
- 400ml evaporated coconut milk*
- 500g diced fresh pineapple
- 2 tbsp fresh lime juice
- Fresh mint and pineapple to serve
Directions
- Blend together all ingredients in a high speed blender.
- Serve over ice if desired garnished with charred pineapple and fresh mint!
*Or you can use 350ml of full fat coconut milk with 2 tbsp of condensed milk
